Despite summer’s end being a mere two weeks away, temperatures are still soaring across the Northern hemisphere. A favorite iced herbal cold brew tea is a cooling blend of Spearmint, Lemongrass, and Hibiscus.

We’re making 6 cups of this iced herbal cold brew tea, so that multiple glasses can be enjoyed, making staying hydrated in the heat a bit easier.

  • 6 cups water
  • 2 Tablespoons Spearmint leaves (Mentha spicata)
  • 1 Tablespoon Lemongrass (Cymbopogon citratus / C. flexuosus)
  • 2 teaspoons Hibiscus blossoms/calyx (Hibiscus sabdariffa)

Making the Herbal Cold Brew Tea

You can certainly use hot water to make this herbal brew, but for this tea blend we prefer cold infusion. All three of these herbs readily infuse their aromatic goodness into cool water, which creates a more delicate, brighter flavor and aroma than using hot water.

Additionally, Spearmint, Lemongrass, and Hibiscus are all rich in vitamin C, which degrades in hot water, so this cool infusion method allows you to access that immune-boosting vitamin C.

I like to let these herbs infuse for a few hours at room temperature. So in the morning, simply combine the herbs and cold water in a glass jug (or my favorite herbal hot/cold brew pitcher). Watch as the Hibiscus instantly begins to infuse the water with its beautiful ruby color!

By lunchtime your herbal cold brew tea will be ready to strain, pour over ice, and enjoy immediately (sweeten if desired).

Refrigerate any leftovers and use within a couple of days.

Why These Herbs for a Cold Brew Tea?

I love the combination of tastes and aromas in this herbal tea blend―sweet Spearmint, fresh Lemongrass, and tart Hibiscus. When combined they make a revitalizing, invigorating herbal tea.

Sweetened or unsweetened, my family enjoys combining our summer iced herbal cold brew teas with sparkling water, which enhances its refreshing quality.

Crush some fresh spearmint or peppermint leaves and rub them on the edge of your glass for an extra cooling pop!

Spearmint (Mentha spicata)

Considered “the mother of mints,” Spearmint is the source of all other mints! Spearmint is sweeter and milder than her spicier Peppermint child. One of the interesting things about the mints is that they can either be cooling or warming. A warm mint tea will be warming and is excellent for colds, while a cool mint tea is cooling and perfect for hot days!

Lemongrass (Cymbopogon citratus /C. flexuosus)

Lemongrass is rich in antioxidants and contributes its delicate citrusy flavor and aroma. Like its essential oil, the tea is uplifting and emotionally cooling. Like Spearmint, Lemongrass is also wonderful for the digestive system.

Hibiscus (Hibiscus sabdariffa)

Tart and demulcent (moistening), Hibiscus has a cooling nature, which is reflected in its effect on both body and emotions. Have you ever walked into a Mexican cafe and seen a glass cask filled with a ruby red beverage? This is Agua de Jamaica, which is a sweetened Hibiscus tea, and one of the most popular chilled drinks in Mexico.

Bump It Up a Notch!

If you want to add a bit of extra-cooling pizzazz to your herbal cold brew tea, make a strong brew of Peppermint tea by combining 1 Tablespoon of dried Peppermint leaf with 3 cups hot water and allowing to cool to room temperature. Strain and pour into ice cube trays, press a fresh mint leaf into each cube, and freeze.

Pour your Summer Cooler Herbal Cold Brew Tea over your Peppermint tea ice cubes and enjoy the extra fresh aroma and flavor.

Peppermint tea ice cubes are also festive and delicious additions to iced black tea, lemonade, and club soda!

    1. Great question, Stachia. Yes, Hibiscus is very rich in organic acids like citric acid. And absolutely! You could enhance the lemony flavor with Lemon Verbena. Or you could go the floral route with Rose Petals. Both would be lovely, I think.πŸ’š
