So last week Punxsutawney Phil emerged reluctantly for the 137th time and announced that he saw his shadow. We now have a forecasted five more weeks of chilly Winter weather, folks! Time to brew an herbal tea and dream of warmer days.

TBH, I was hoping for an early Spring. I’m anxious to get out there to coax our herbs, flowers, and berries into bloom.

I’m looking forward to the aroma of blooming Lavender wafting through the windows and to brushing up against the Peppermint and Spearmint, releasing their fresh scent into the warm evening air.

But…we are still having cold, damp, and sometimes icy, days and nights, so I look to my dried summer-harvested herbs to inspire dreams of those warm Summer days and nights that are certainly somewhere ahead.

This bedtime herbal tea will help your body relax and prepare your mind for restful slumber. If you close your eyes and inhale, you can detect that hint of Summer the herbs have been holding close, waiting for the perfect time to share them. That time is now!

From Top Left Lavender Buds Orange Peel Rose Petals Peppermint Leaf Stevia Leaf and Hibiscus Flower
  • 2 teaspoons Lavender Buds (Lavandula angustifolia)
  • 1 teaspoon Sweet Orange Peel (Citrus x sinensis)
  • 1 teaspoon Peppermint Leaf (Mentha x piperita) or Spearmint Leaf (Mentha spicata)
  • 1 teaspoon Rose Petals (Rosa spp)
  • 1/8-1/4 teaspoon Stevia Leaf (Stevia rebaudiana)
  • 1/8 teaspoon Hibiscus Flower (Hibiscus sabdariffa)* – optional

*You really only need a few petals of Hibiscus, as they’re just to give the tea that lovely rose gold color of Summer evenings.

Combine all herbs a small bowl. Stir well and enjoy the colorful blend of lavender, orange, pink, red, and green.

The entire amount about will make 4 cups of tea (3 if you like a stronger brew).

Make a Cup of Summer Dream

Add 1 slightly mounded teaspoon to a steeping basket. Pour 8-10 ounces of piping hot water over the herbs. Cover. Steep 7-10 minutes. Lift basket, then press the herbs with a spoon (or spoon handle) to extract all the goodness you can. Relax and enjoy!

  • A 7 minute steep will produce a pale golden, lightly flavored, and delicately scented, perfectly lovely tea.
  • A longer steep will produce a stronger tea with a deeper rose gold color and a more powerful flavor and aroma.
  • For this blend, a steep longer than 12 minutes brings out the bitters of the herbs, and we’re really looking for maximizing the freshness of the mint and the soft floral of the lavender. So, stick with 12 minutes or less.
